In a human study, intravenous administration of N-acetyl-D-glucosamine had no effect on blood glucose levels nor did insulin administration stimulate the removal of N-acetyl-D-glucosamine from the blood. A subsequent study found that N-acetyl-D-glucosamine is metabolized in humans without an appreciable change in blood sugar concentrations.

At a concentration of 1.5 grams of N-acetyl-D-glucosamine per litre of breast milk, an eight pound infant consumes almost 1 gram of N-acetyl-D-glucosamine per day.
